   I put oats and seeds in a bowl.

   I roughly chop almonds and peanuts.

   I finely chop dried fruit, add to seeds and nuts and mix.

   I heat honey, maple syrup and peanut butter in a small pan.

   Once melted, without boiling, I remove from heat and stir in egg white.

   I pour into the bowl and mix to a moist, sticky mixture.

   I line a square tin with baking paper, add the mixture and press down firmly.

   I bake at 180°C for about 25 minutes until golden. Ovens vary, so watch it. Cool very thoroughly.

   Once cold, I invert, melt dark chocolate in a water bath or microwave and cover the surface completely.

    I refrigerate for a few hours until firm.

    I turn over and cut bars.

    I wrap individually in transparent food-safe wrapping and secure with tape.
