I rinse quinoa thoroughly to remove saponin, described as harmless but bitter. I cook in a rice cooker or pan with double its weight in water: 300 g quinoa and 600 g water, salt and cover. Once boiling, lower heat and cook about 15 minutes until absorbed, or follow packet instructions.

I finely chop carrots and leeks and cook in oil, keeping some crispness.

I put quinoa and eggs in a bowl.

I add vegetables.

Chopped dried tomatoes.

Parmesan.

Rice flour; I mix.

I add paprika, salt and pepper for a workable mixture.

I form 6 fairly large burgers with a ring, oil lightly and bake or air-fry at 190°C for 12 minutes until crusted.

Serve with vegetables or salad.
