My new MAMMAMIA machine makes cavatelli quickly and easily. I enjoy new recipes: this is the base, with sauce in the next article.

Method

The preparation remains in its original order; guided mode is not available for this structure.

I use a mixer hook, or make a flour well and add water by hand. I put both flours in the mixer.
I dissolve ink in hot water in a bowl.
I whisk well and add salt.
I add to flours.
I knead about 10 minutes.
Once combined, I remove.
I stretch and slap on the board until elastic.
I form a ball.
I wrap and rest at least half an hour.
I cut rested dough into pieces, keeping rest covered.
I form ropes a cm in diameter.
I feed a rope into my LITTLEMAMA machine.
I flour with semolina and turn handle to produce cavatelli.
I spread on a lightly floured cotton towel on a tray to dry.
This made two baking trays.
Now for sauce, recipe on the blog. Without the machine, bought online and recommended, see Semolina Cavatelli for the hand method.
