I made these for my husband after cereal and nut bars. He often hikes, and the original describes these honey bars as quickly absorbed, calorie-rich and convenient in a backpack. Delicious for non-hikers and sportspeople too.

- Step 1 of 9
I lightly toast sesame seeds in a large pan, stirring often; over-browning makes them bitter.

- Step 2 of 9
I put sugar and honey in a heavy-based pan.

- Step 3 of 9
I gently melt and boil until slightly amber.

- Step 4 of 9
I add sesame seeds.

- Step 5 of 9
I stir and cook briefly.

- Step 6 of 9
I quickly spread on baking paper on the worktop into a rectangle with a spatula.

- Step 7 of 9
I cover with another sheet and roll about half a cm thick.

- Step 8 of 9
I cut regular bars before cooling, otherwise they harden and break. I leave to cool.

- Step 9 of 9
Once cold, I wrap individually in transparent food wrapping and keep in a tin. The photo also shows my other bars, recipe on the blog.
