The original presents this as a recipe for people intolerant to gluten and raising agents. This wonderfully light shortcrust pastry also works for biscuits or tarts and is delicious for everyone. Butter can be replaced with oil.

Method

The preparation remains in its original order; guided mode is not available for this structure.

I put the flour and sugar in a bowl.

I add a pinch of salt.

I add the cold diced butter and rub in with my fingertips.

I add the egg and grated lemon zest.

I keep mixing until a dough forms, wrap in cling film and leave to rest for 15 minutes.

Now choose how to use this base. I rolled it out and cut discs with a pastry cutter.

I lined small tins, added a teaspoon of mixed jam and cut pastry strips with a wheel.

I bake at 180°C for 20 minutes. Watch them: they should be nicely golden.

Leave to cool before removing from the tins. Keep under a glass dome or, even better, in a tin.
