My first caramelised figs, from Simona's recipe. Sadly she is no longer with us. I loved hers and asked for the recipe. Mine must rest, so I have not tasted them yet, but hope to honour her memory. Excellent with cheese.

Method
The preparation remains in its original order; guided mode is not available for this structure.
I choose firm, intact figs with stalks, lucky to have a garden tree, and wash and dry.

I prepare a glass of cider vinegar.

I put sugar and vinegar in a heavy-based pot.

I pack figs tightly in one layer.

I cover and cook gently for 2 hours without touching. Towards the end, check for semi-thick syrup.

After two hours, I switch off.

I put figs in a previously sterilised large jar and cover with syrup.

I close and invert until cool to form a vacuum.

I label and keep in the cellar for at least 1 month before eating.
