I like turning leftovers into delicious, very inexpensive meals. I mixed white cauliflower and Romanesco, using half wholemeal and half type 00 flour, though only type 00 is fine. My GNOCCHI WITH OIL, GARLIC AND ANCHOVIES recipe is also on the blog.

- Step 1 of 10
I blend the broccoli, preferably cold so it absorbs less flour.

- Step 2 of 10
I put in a bowl with egg, salt and pepper.

- Step 3 of 10
I add both flours, reserving some.

- Step 4 of 10
I knead quickly and add the remaining flour if needed. Do not make too firm a dough, as it hardens during cooking.

- Step 5 of 10
I form logs and cut gnocchi.

- Step 6 of 10
I flour them, set aside and make the sauce.

- Step 7 of 10
I put extra virgin olive oil and crumbled sausage in a large pan.

- Step 8 of 10
I slice the shallots and add to the sausage.

- Step 9 of 10
I brown well and cook the sausage through.

- Step 10 of 10
Meanwhile, I boil plenty of salted water, add gnocchi and drain when they float. I put in the sauce pan with a few tablespoons of cooking water, grated Parmesan and a drizzle of oil, then plate.
