Very soft and fluffy with a jam centre. I used fig jam; choose your favourite.

  1. Step 1 of 10

    I mix eggs, sugar and vanilla in a bowl.

  2. Step 2 of 10

    I beat until thick and frothy and drizzle in oil.

  3. Step 3 of 10

    I add yoghurt while beating.

  4. Step 4 of 10

    I add sifted flour and baking powder.

  5. Step 5 of 10

    I put cases in a muffin tin and a tablespoon of batter in each.

  6. Step 6 of 10

    I add a teaspoon of jam in the centre.

  7. Step 7 of 10

    I cover with more batter.

  8. Step 8 of 10

    I made 12 fairly small muffins.

  9. Step 9 of 10

    I bake at 180°C for 25 minutes.

    I cool on a rack and dust with icing sugar.
