Fancy an East Asian evening? Here are noodles, a typical East Asian pasta used in countless recipes, including comforting soups for cold evenings with chicken, meat, fish or vegetables. There are many versions. I researched them and will explain how to make them here; in another post I will present my CHICKEN RAMEN recipe.
You can buy ready-made noodles, but making them at home is hugely satisfying 😜👍

- Step 1 of 13
Noodles differ from our fresh pasta in texture and colour because of the baked bicarbonate of soda. The original preparation is simple: I put 50 grams of bicarbonate of soda on a baking tray, bake at 120°C for 1 hour and leave to cool. I store what I do not use in a glass jar. I prepared it the day before.

- Step 2 of 13
I dissolve the baked bicarbonate in the water and wait a few minutes. I put the flour in a bowl and add the water.

- Step 3 of 13
I stir with a spoon; do not use your hands until the water has been absorbed.

- Step 4 of 13
The dough should be rather ragged. I rub it between my hands, then tip it onto the worktop.

- Step 5 of 13
I now knead by hand for around ten minutes, wrap the dough in cling film and leave to rest for 10 minutes.

- Step 6 of 13
I knead again for 10 minutes and leave to rest. Then I knead again and leave for another half-hour, still wrapped in cling film, before kneading again until smooth and no longer sticky.

- Step 7 of 13
If you have followed the quantities, you will not need more flour. I flatten the dough with a rolling pin so it fits into the pasta machine.

- Step 8 of 13
I pass it repeatedly through the rollers on their widest setting until smooth.

- Step 9 of 13
I divide the dough into three equal pieces and roll again, narrowing the rollers but leaving the sheets about 3 mm thick, as for tagliolini. They should remain fairly thick. I pass through the cutting rollers to form noodles.

- Step 10 of 13
I spread the noodles on the worktop without piling them up and leave to dry. I made mine in the morning for the evening.

- Step 11 of 13
To use in ramen, boil them in lightly salted water.

- Step 12 of 13
Rinse briefly under cold water before adding to the boiling stock with all the accompaniments.

- Step 13 of 13
Here they are in a lovely chicken ramen; the recipe is on the blog.
