- Step 1 of 10
I grind the almonds, previously kept in the freezer, in a processor.

- Step 2 of 10
I peel, wash and chop the potatoes.

- Step 3 of 10
I peel and chop the celeriac.

- Step 4 of 10
I cook the vegetables in a steamer, microwave or the usual way for about 25 minutes.

- Step 5 of 10
Check they are tender.

- Step 6 of 10
I put them in a pan and blend with a hand blender. I tried a potato ricer, but the celeriac was hard work. I add the ground almonds.

- Step 7 of 10
I pour in the cow's milk or almond milk.

- Step 8 of 10
I add salt, pepper and a few tablespoons of extra virgin olive oil and continue blending.

- Step 9 of 10
The mash should be soft and fluffy. Add a splash more milk if needed.

- Step 10 of 10
Keep warm and serve with a few drops of parsley sauce as shown in the recipe.
