- Step 1 of 10
I boil the basmati rice according to the packet instructions, drain while still firm and leave to cool for at least half an hour or in the fridge.

- Step 2 of 10
I used frozen peas: blanch in water, drain and set aside.

- Step 3 of 10
I beat the two eggs with a pinch of salt in a bowl.

- Step 4 of 10
I heat a couple of tablespoons of vegetable oil in the wok, add the eggs and scramble, keeping them soft. I remove and set aside. I add another 2 tablespoons of vegetable oil to the wok, add the thinly sliced spring onion and fry for a minute.

- Step 5 of 10
I add the peas and cook for a few minutes.

- Step 6 of 10
I add the scrambled eggs.

- Step 7 of 10
I add the cold basmati rice, mix and stir-fry over a medium heat.

- Step 8 of 10
I add the cooked ham and toss for a few minutes; the ham should not cook further.

- Step 9 of 10
I add a couple of tablespoons of soy sauce, or more to taste.

- Step 10 of 10
Ready: delicious, colourful and flavourful. The original says leftovers keep for a couple of days in the fridge and can be reheated in a pan.
