A delicious dessert that is very quick to make. Unexpected guests arrived and I had no dessert. I always keep puff pastry in the fridge: it is a great help for sweet or savoury snacks. I usually make these with other fruit, but pineapple is really good.

- Step 1 of 9
I dry the pineapple slices very thoroughly with kitchen paper, unroll the pastry and cut into 6 equal pieces, leaving them on the baking paper.

- Step 2 of 9
With a small knife, I cut around the 4 corners, 1 cm in from the edge, leaving 1 cm uncut at the centre.

- Step 3 of 9
I put a teaspoon of jam in the centre of each rectangle.

- Step 4 of 9
I place a well-dried pineapple slice in the middle.

- Step 5 of 9
I bring the 4 corners towards the centre.

- Step 6 of 9
I press gently in the centre.

- Step 7 of 9
I secure with a pistachio or almond.

- Step 8 of 9
I place on a baking tray, dust with icing sugar and bake at 200°C for 20 minutes.

- Step 9 of 9
Watch them: they should be golden, and every oven differs. I leave to cool on an oven rack.
