My trusted fisherman brings wonderful Garda fish, filleted on request. This morning he brought trout, and I used few ingredients to enjoy its flavour. I also have garden lemons and basil and olive oil from my trees. Excellent with tomato and basil salad.

Do I have all the ingredients?

Method

The preparation remains in its original order; guided mode is not available for this structure.

I wash fillets and remove pin bones with tweezers; run a finger against their direction to lift them for easy removal.

I used an air fryer, but a normal oven works for more fillets. I put them in lightly oiled suitable trays or on baking paper and add chopped parsley.

I add garlic slices, pepper and salt.

I add thin slices of my organic garden lemon, lucky to have them, and a little oil.

I preheat fryer or oven to 180°C and cook trout for about 15 minutes, depending on size.

Meanwhile, I wash delicious cherry tomatoes and basil.

I chop and dress with oil, pepper, salt, balsamic vinegar, garlic if wanted and hand-torn basil. Dress ahead to develop flavour.

I plate trout, finish with oil and add tomatoes.
