Whenever I go to Germany, I return with various sausages and breads different from those in Italy. I used leftover Weisswurst for this simple, delicious soup. Choose your favourite sausages; these are particularly flavourful.

Method

The preparation remains in its original order; guided mode is not available for this structure.

I peel and wash the potatoes and cut into small pieces.

I finely chop the onion and celery.

I put extra virgin olive oil, butter, celery and onion in a pot and sauté.

I add the potatoes, brown for a few minutes and season with salt and pepper.

I cover with meat or vegetable stock, put on the lid and cook the potatoes.

I remove the sausage skins.

I slice the sausages into rounds.

After around twenty minutes, the potatoes are cooked. I blend briefly, leaving some potato pieces whole.

I add the sausages and boil for 5 minutes.

I add chopped chives and serve with grated Parmesan.

I made pan-toasted croutons from leftover Brezel, a typical German bread.
