Ingredients and method
The preparation remains in its original order; guided mode is not available for this structure.
Christmas is over and the fridge is full of leftovers. Served unchanged they may be unappealing, but with little effort they become tempting and tasty. Here is an idea, with no exact quantities because you can use what you have.
INGREDIENTS
BOILED MEAT
1 LARGE ONION
EMMENTAL
GRILLED VEGETABLES IN OIL
PICKLED CUCUMBERS
OLIVES
DRIED CHERRY TOMATOES
CAPERS
OREGANO
EXTRA VIRGIN OLIVE OIL
APPLE VINEGAR
I cut the boiled meat into small pieces. Chicken or hen meat works too.
I thinly slice a large onion and soften in a little oil, adding vinegar and a little water. It should soften but remain crisp. I add a little salt.
I add it to the meat with the olives.
I chop the cucumbers, dried tomatoes and capers.
I chop the grilled vegetables in oil.
I dice the Emmental.
I add everything to the meat with a good pinch of oregano, plenty of extra virgin olive oil, ground pepper and salt and vinegar to taste.
Done! Add anything else you want to use up: small onions, mushrooms and hard-boiled eggs are excellent.
