Stuffed chicken roll

Whole chicken saves money: €8.80 for 1.800 kg, making a giant roll. Boning takes patience, or ask a butcher. I use carcass, celery, carrot and onion for stock.

Pan-cook or bake with rosemary, wine, vegetables and stock, perhaps potatoes. Feeds at least 6.

Method

The preparation remains in its original order; guided mode is not available for this structure.

I bone and butterfly with a sharp knife into a rectangular even base.

I cover and flatten, then season with salt and pepper.

I wilt spinach in oil, butter, garlic, salt, pepper and parsley, covered and stirring without water.

I beat eggs with cheese, salt and pepper and parsley.

I divide into 4 and cook 4 small omelettes in a square pan to cover chicken.

I lay omelettes over chicken.

I add spinach and plenty of cheese.

I roll using cling film.

I tightly close ends and wrap bacon over all, including ends.

I tie with string.

I wrap firmly and refrigerate a couple of hours.

Cook or freeze for guests as I did.
