Lovely crumbly biscuits. I used Red Love apples with red crisp flesh and a caramel-like flavour. Wonderful but hard to find, so choose your preferred apples.
INGREDIENTS FOR 20 BISCUITS
PASTRY
250 G FLOUR
100 G BUTTER
100 G SUGAR

3O G CHOCOLATE CHIPS
ICING SUGAR
I mix flour, sugar, baking powder and vanilla.I add egg and soft butter.I mix quickly. I form a ball, wrap and rest at least half an hour.Meanwhile, I peel and finely dice apples.I add apples to rested pastry. Then chocolate chips.I knead until incorporated, dusting flour if needed.I roll a rectangle about 1 cm thick.I cut rectangular biscuits with a knife.I coat biscuits in icing sugar.I space on a parchment-lined tray.I bake at 180°C for about 20 minutes.Delicious; keep several days in a tin or under a cake dome.Lovely with pears and chocolate or apples and sultanas too.
