Ingredients for 4 people
4 smoked chops, sold already smoked in supermarkets
1 tin sauerkraut
50 g smoked pancetta
1 onion
5 or 6 juniper berries
1 glass white wine
Extra virgin olive oil
Salt and pepper

I chop onion and dice smoked pancetta.

I gently fry onion and pancetta in oil in a wide pan.

I add and brown the chops.

I add white wine and let evaporate.

I add sauerkraut rinsed to reduce acidity, and a glass of water or stock.

I cover and cook about 20 minutes until tender, adding stock if needed.
I served with mustard, horseradish sauce and spicy tomato sauce.
