Nigella Lawson's easy, quick sweet and sour carrots, ideal if you like crisp vegetables. The original says they keep a month in the fridge and improve in flavour. Make small batches as needed without sterilising large quantities of jars; ready after a few hours.
I used spices I had. Lovely as a starter or with meat or fish.

I peel carrots and cut into sticks.I put water, vinegar, salt, honey, bay leaves and all spices in a small pan.I boil, stirring to dissolve salt and honey, then pour over carrots.I submerge well and rest about 1 hour until room temperature.I put in a 500 ml jar, seal and refrigerate at least an hour. Ready, with more flavour as they rest. The original says they keep a month refrigerated.
