INGREDIENTS
1 CAULIFLOWER
3 TABLESPOONS TAGGIASCA OLIVES
3 TABLESPOONS DESALTED CAPERS
10 CHERRY TOMATOES
10 ANCHOVIES IN OIL
STALE BREAD
OREGANO
EXTRA VIRGIN OLIVE OIL
SALT
PEPPER
I clean a good cauliflower.
I separate small florets, keeping only tender leaves.
I wash and boil in salted water for 10 minutes after boiling resumes, keeping firm, then drain.
I arrange in a single layer on a parchment-lined tray greased with oil.
I drain olives and anchovies from oil, desalt capers and wash tomatoes.
I finely dice tomatoes.
I distribute over cauliflower.
I add capers, olives and chopped anchovies.
I break up stale bread slices.
I chop coarsely and mix with a tablespoon dried oregano and oil.
I spread crumbs evenly over cauliflower. I add salt and pepper.
I drizzle with extra virgin olive oil and bake at 180°C for 20 minutes.
