Sweet peach season makes a wonderful soft moist cake for breakfast or snacks. A piece disappears whenever I look at the stand. Delicious recipe from DovealSud.
INGREDIENTS
4 EGGS
170 g SUGAR
110 g SUNFLOWER OIL
250 g RICOTTA
300 g TYPE 00 FLOUR
100 g ALMONDS
1 SACHET OF BAKING POWDER
1 PINCH OF SALT
3 RIPE NECTARINES
FINISHING
PEARL SUGAR
PEACH JAM

I roughly process almonds.

I mix room-temperature eggs and sugar.

I beat fluffy and pale, drizzling oil while beating.

I add ricotta.

I sift flour and baking powder.

I beat into eggs and add almonds.

I wash nectarines, keep skin and dice 1 and a half.

I fold into batter.

I pour into a buttered or oiled and floured ring tin.

I level, slice remaining 1 and a half nectarines, arrange on top and add pearl sugar.

I bake at 170°C fan for 40/50 minutes, test with a skewer, cool slightly and unmould.

I brush with peach jam to shine.
