Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

INGREDIENTS FOR 2 PEOPLE
16 prawn tails
8 pancetta slices, halved lengthways
SAUCE
1 pot Greek yoghurt
1 cucumber
Parsley and mint
Half a garlic clove
Salt
Pepper
Extra virgin olive oil
A delicious starter or main, served with focaccia and Lambrusco rosé. This fresh Greek sauce suits meat and fish.
I shell and devein prawns.
I halve pancetta lengthways.
I wrap each tail in a slice.
I refrigerate all while making sauce.

SAUCE
I peel cucumber.
I coarsely grate.
I drain in a sieve to remove water and bitterness, adding salt.
I rest an hour; meanwhile, I put yoghurt in a bowl and grate half a garlic clove.
I add salt.
Pepper.
Chopped parsley and mint.
Extra virgin olive oil.
I mix well.
I squeeze cucumber thoroughly and mix into yoghurt.
Sauce ready, I refrigerate.
I heat a non-stick pan and add prawns without fat, as pancetta provides it.
I brown both sides for 5 minutes on high, without salt as pancetta is salty.
I serve sauce in little bowls beside prawns.
Thanks to Il Cucchiaio d'Argento for the idea.
