Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

This is the term for peeled, diced tomato.
With these simple steps, the tomatoes peel easily without waste.

I choose vine tomatoes, wash them well and remove the stalks. On the opposite, smooth side, I score a cross through the skin with a knife.

I bring a pan of water to the boil, add the tomatoes and leave for a minute.

I drain them and plunge into a bowl of iced water.

After a few minutes, I take them out; the skin should come away easily.

I cut the peeled tomatoes into 4 quarters, remove all the seeds and watery pulp, then cut each section into strips and cubes.

I put them in a bowl. They can be used for various dishes; with basil, salt and pepper, they are excellent on bruschetta.
