I was given quinces and made delicious fragrant jam. I wash and brush thoroughly to remove surface fuzz.

Method

The preparation remains in its original order; guided mode is not available for this structure.

I halve and quarter quinces, keeping pectin-rich peel.

I trim damaged parts, chop and put in cold water with juice of 1 lemon.

I drain into a pot and add sugar.

I add a glass of water.

I cook about 20 minutes until breaking down, add lemon juice and cook another 10 minutes.

I blend and add a teaspoon of cinnamon if wanted.

I pour into sterilised jars, close, cover jars with water in a pot and boil for 30 minutes.

I cool in the pot and remove, checking vacuum: lids should click and remain flat without bulging.
