INGREDIENTS FOR 2 PEOPLE
2 thin meat slices (veal, pork, chicken or turkey breast)
1 egg
'00' flour
Grated stale bread
TOPPING
1 mozzarella
4 tablespoons tomato sauce
2 cooked ham slices
Oregano
Oil, butter
Salt, pepper
I prepare classic cutlets, flattening with a meat mallet, preferably under cling film. I coat in '00' flour, removing excess, then beaten egg and finally breadcrumbs, pressing firmly. I heat oil and a knob of butter in a frying pan and add the cutlets once melted.

Once golden underneath, I turn and finish browning, then drain on kitchen paper.

I put the cutlets on a parchment-lined tray and cover with tomato sauce.

I add a ham slice to each.

Some previously sliced, dried mozzarella.

I sprinkle with oregano, oil, a little salt and ground pepper.

I preheat the oven to 200°C and bake until mozzarella starts melting.
Serve with fresh salad or potatoes. Flavourful and substantial, they can be prepared ahead and baked when needed.
