Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

I was given splendid porcini and truffles. I decided to dry some porcini for winter risottos and other dishes. I brush off impurities and use a small knife to remove the earthy parts. If not very dirty, I prefer gently wiping with damp kitchen paper rather than washing under running water.
I separate the stalks from the caps and slice with a sharp knife.
I slice them all evenly.
I arrange the mushrooms in a single layer on the dehydrator trays.
I cover and set the temperature to 40°C.
I set it for 8 hours; after 8 hours the mushrooms were completely dry.
I let them cool and put them in a glass jar.
