Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

What is molva, or ling? My husband thought he bought salted cod, his favourite. Similar-looking, less costly and less pungent, it led me to search online. I found it described as a cod-like fish cooked like salt cod. Delicious anyway.

INGREDIENTS FOR 4

1 LING FILLET, ABOUT 900 G

1 JAR TOMATO SAUCE

1 ONION

2 GARLIC CLOVES

EXTRA VIRGIN OLIVE OIL

TAGGIASCA OLIVES

OREGANO

ITALIAN 00 FLOUR

SALT

PEPPER

CHILLI OR CHILLI OIL

I rinse salt from fillet. Like salt cod, it needs 3 days soaking.

I cut large portions.

I cover with cold water in a tall container, cover and refrigerate for 3 days, changing water 2 times daily.

After 3 days, I drain and dry.

I coat in flour.

I sauté thinly sliced onion in extra virgin olive oil.

I brown fish all over and salt sparingly as already salty, adjusting later if needed.

I add tomato pulp, Taggiasca olives and oregano, cover and cook for 30/40 minutes with water if needed.

I served with soft polenta.
