Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

Simple, tasty and easy to prepare: an excellent side dish.

INGREDIENTS

OYSTER MUSHROOMS

PARSLEY

GARLIC

EXTRA VIRGIN OLIVE OIL

SALT

PEPPER

I clean the mushrooms, removing the tough part of the stalk. Instead of washing under running water, which would soak them, I wipe with damp kitchen paper. They are usually quite clean and free of soil.

I line a large baking tray with baking paper and oil it with extra virgin olive oil. It is best to arrange the mushrooms in a single layer. I cut them into rough pieces, arrange in the tray and add chopped parsley with a garlic clove, salt and pepper.

I add plenty of extra virgin olive oil and bake at 180°C for 30 minutes, stirring after 15 minutes.

When I have plenty, I put the cooked mushrooms in food bags or vacuum packs and freeze them for later. I mixed mine with button and honey mushrooms to make fantastic lasagne.
