With plenty of figs from the tree in my garden, I have turned them into jam, caramelised them and used them in muffins and cakes; now, ice cream! A real discovery, delicious. In this heat my old ice cream maker is always running. This ice cream has no cream but is wonderfully creamy, excellent with chocolate topping and chopped walnuts.

Method

The preparation remains in its original order; guided mode is not available for this structure.

Before starting, I switch the ice cream maker to cooling mode.

I peel the figs, cut them into pieces and put them in the blender jug.

I add the lemon juice and blend with a hand blender.

I add the milk.

The sugar.

2 tablespoons of brandy, optional, then blend again.

I set the ice cream maker timer for 25 minutes, switch on the paddles and pour in the purée.

I cover with the lid.

After 25 minutes the ice cream is ready. I switch off the paddles and remove the ice cream, now soft and creamy.

It is best to put it in the freezer for 1 hour before eating, although it is delicious when this creamy. The original says any leftovers keep for a long time in the freezer.
