A typical salad from the island of Pantelleria, with fresh, readily available ingredients and distinctly Mediterranean flavours: definitely worth trying. These ingredients are for one portion. I added tuna too, and used the sweet and sour onions I had preserved; the recipe is on the blog. Otherwise plain Tropea onion is fine: just add a little vinegar to the dressing. It can be made ahead and is excellent to take to work, or, for the luckier ones, to the beach.
