A lovely winter roast for chestnut lovers and celebrations. I make a day ahead, slice and cover with sauce for a tender, flavourful result. Reheat when needed, leaving time for dessert.

- Step 1 of 11
I wrap loin in bacon and tie.

- Step 2 of 11
I sauté garlic and thin onion slices in butter and oil in a large pot.

- Step 3 of 11
I brown meat all over for about ten minutes.

- Step 4 of 11
Once coloured, the original repeats all sides, then adds herbs and cooks another 5 minutes.

- Step 5 of 11
I add white wine and evaporate.

- Step 6 of 11
I add salt and pepper.

- Step 7 of 11
I add 2/3 glasses hot stock, cover and cook half an hour.

- Step 8 of 11
After 30 minutes, I add chestnuts, remove herbs and cook another half hour. The original gives 63/65°C internal temperature; add stock if needed.

- Step 9 of 11
Chestnuts should be very soft and sauce thick without thickener.

- Step 10 of 11
I cool meat out of sauce and slice.

- Step 11 of 11
I put in a dish and cover with sauce, keeping chestnut pieces. Thin with stock if thick or boil to reduce if thin.
