Want light, thick, flavourful mayonnaise?
Homemade mayonnaise is easy and quick, really 5 minutes. Flavour it as you wish with artichoke cream, sun-dried tomato cream, olive pâté and more. You know what it contains, without preservatives or flavourings!
INGREDIENTS
1 whole egg
240 g sunflower oil
2 tablespoons white vinegar
1 pinch salt
1 large tablespoon truffle cream
I pour the seed oil and two tablespoons white vinegar into the blending jug.

I add a pinch of salt.

The whole egg.

A generous tablespoon truffle cream, sold in small jars, including at supermarkets.

I insert the stick blender and blend.

It really takes only two minutes. After less than a minute, I move the blender up and down; it quickly becomes a thick, airy cream.

Once well combined and firm, it is ready; I remove the blender.

I put it in a small bowl and spoon a little truffle sauce on top.

I refrigerate it, where it keeps for a couple of days.
Excellent for sandwiches and rolls or alongside chicken or meat skewers.
