Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

Delicate mousse without sugar, organically flavoured with orange and crisp chocolate-coated cereal. Delicious!
INGREDIENTS FOR 10/12 SMALL GLASSES
MOUSSE
200 g dark chocolate
4 eggs
1/2 orange, zest and juice
200 ml fresh cream
Orange zest to decorate
Crisp chocolate cereal
CRISP CEREAL
50 g dark chocolate
100 g Nutella
150 g wholegrain or ordinary cornflakes
I made 1/2 batch in the photos.
I melt chocolate in a bowl over bain-marie or microwave.
I separate yolks and whites.
I grate half an orange's zest.
I squeeze half an orange.
I softly whisk whites.
I gradually pour orange juice onto yolks while whisking.
It should become pale whipped cream.
I add lukewarm melted chocolate.
I continue whisking.
I gently fold whites in gradually upwards from the bottom.
The cream should be light.
I divide between glasses and refrigerate at least 3 hours. I top with unsweetened softly whipped cream, crisp cereal and orange zest strips.
The cereal method is on the blog. Make ahead and refrigerate, good alone or in yoghurt. Melt chocolate and Nutella, coat cereal, spread separated on parchment and refrigerate until firm, not sticky; store in a jar or tin.
