Ingredients and method
The preparation remains in its original order; guided mode is not available for this structure.
A friend gave me interesting baking books; this recipe comes from Muffin. Delicious, with wholemeal flour and oats for those watching their figure, as described in the original. Sweet, crisp spiced topping adds flavour and prunes keep them soft.INGREDIENTS FOR 12 MUFFINS
225 G ITALIAN 00 FLOUR
75 G WHOLEMEAL FLOUR
2 AND 1/2 TEASPOONS BAKING POWDER
115 G BROWN SUGAR
5O G ROLLED OATS
110 G PITTED PRUNES
2 EGGS
250 ML MILK
100 G BUTTER
VANILLA
TOPPING
1 TABLESPOON ITALIAN 00 FLOUR
1/2 TEASPOON CINNAMON
I/4 TEASPOON NUTMEG
55 G BROWN SUGAR
4 TABLESPOONS ROLLED OATS
20 G MELTED BUTTER
I sift flours, add baking powder and vanilla.
I add sugar and oats.
I finely chop prunes.
I add to dry ingredients.
I mix milk and eggs in a bowl.
I add melted butter.
I mix well and pour onto dry ingredients.
I stir briefly with a wooden spoon to avoid rubbery muffins.
I divide between 12 paper cases in a muffin tin.
I mix topping ingredients in a small bowl.
I spread topping and press lightly.
I bake at 180°C for 20 minutes until a skewer comes out dry.
I rest on the oven rack.
