I had some peaches and used sweet, soft doughnut peaches, but you can use whichever kind you like. An easy, quick, very soft bake. This time I did not use classic muffin tins but these little rectangular moulds, which I find very pretty.

- Step 1 of 9
I peel and finely dice the peaches. I crack the eggs into a bowl and add the sugar.

- Step 2 of 9
I beat with a hand whisk until the sugar has dissolved, then add the oil in a thin stream, stirring continuously.

- Step 3 of 9
I add kefir, or whichever you prefer: milk or even water.

- Step 4 of 9
I grate in the lemon zest.

- Step 5 of 9
I sift the flour and baking powder and add gradually to the mixture.

- Step 6 of 9
I get a smooth batter.

- Step 7 of 9
I add the finely diced peaches, mixing with a spatula.

- Step 8 of 9
I divide the mixture between the moulds and put some cubes of the reserved peach on top.

- Step 9 of 9
I bake at 170°C for about 20 minutes. Use a skewer to check they are cooked. I used a fan oven; if using a conventional oven, increase the temperature to 180°C.
