I dissolve yeast in room-temperature water in the mixer bowl.
2015/01/img_2365.jpg
I add honey.
2015/01/img_2366.jpg
I add wholemeal flour.
2015/01/img_2368.jpg
I start the dough hook, then add oil.
2015/01/img_2369.jpg
Once combined, I add salt.
2015/01/img_2370.jpg
I mix briefly, gradually add '0' flour and knead for about 10/12 minutes. The dough should release from the sides; otherwise, stop halfway, scrape bowl and hook, and restart.
2015/01/img_2371.jpg
After 10 minutes, I remove onto a lightly floured surface.
2015/01/img_2372.jpg
I briefly work into a roll.
2015/01/img_2373.jpg
I turn it vertically and roll up.
2015/01/img_2375.jpg
I form a block and flour above and below.
2015/01/img_2377.jpg
I cover with cling film to prevent drying.
2015/01/img_2378.jpg
And a cloth to keep warm.
2015/01/img_2379.jpg
I rest for 60 to 75 minutes.
After this first rise, the dough has increased in size.
2015/01/img_2380.jpg
I lightly flour and flatten with my palm to strengthen it.
2015/01/img_2381.jpg
I make a three-fold, bringing one side to the middle.
2015/01/img_2382.jpg
Then overlap the other side.
2015/01/img_2383.jpg
I flatten with my palm to strengthen and develop gluten.
2015/01/img_2384.jpg
I fold in half, flour above and below and press lightly.
2015/01/img_2387.jpg
I cover with cling film.
2015/01/img_2388.jpg
And the cloth, then rise for 20 minutes.
2015/01/img_2389.jpg
After the second rise, I place the dough in front of an oiled tin.
2015/01/img_2391.jpg
I flatten with my palm to match the tin's length.
2015/01/img_2392.jpg
I fold in three, first to the middle, pressing lightly.
2015/01/img_2393.jpg
Then close into a roll.
2015/01/img_2394.jpg
I put in the tin, seam underneath.
2015/01/img_2396.jpg
I beat a yolk with a little water and brush the dough.
2015/01/img_2398.jpg
I cover and rise warmly for about 60/70 minutes. In winter, I used a place by the radiator; alternatively, use the switched-off oven with its light on, about 25/30°C.
I heat the oven to 220°C, reducing to 190°C when baking.
2015/01/img_2399.jpg
I uncover, gently brush with more egg and bake for 30/40 minutes. Cover with foil halfway if browning too much.
2015/01/img_2420.jpg
Cool completely before slicing with a serrated knife.
It keeps several days wrapped in foil inside a food bag.
