A quick recipe for my grandson’s snack, which he really enjoyed, although I must say the adults liked it too. I used rice flour, but ordinary flour, oat flour or another kind also works. A way to use very ripe bananas; naturally you can make them larger for adults.

Method
The preparation remains in its original order; guided mode is not available for this structure.

I put the banana in a bowl and mash it with a fork.

I add the grated lemon zest and squeeze in a few drops of juice.

I add the egg and mix.

I add the flour and baking powder and mix to remove any lumps, still using the fork.

The batter is already ready.

I grease a non-stick pan with very little oil and add small spoonfuls of batter, keeping the heat low.

I let them brown for a few minutes on one side, then turn with a spatula.

I arrange them on a plate as I go. The original says they keep in the fridge for a couple of days.

Another very indulgent alternative for adults: add a spoonful of batter, put a teaspoon of Nutella in the centre and cover with more batter. Amazing!!! 😜🤪
