Delicious, very soft rolls, ideal for buffets filled with cured meats and cheese. Also lovely with butter and jam, Nutella or pistachio cream. Use only Manitoba flour if you prefer: the rolls will be pale. Add seeds of your choice or leave plain.

For smaller rolls, divide the dough into 12 or 14 pieces.

  1. Step 1 of 16

I put the flour and yeast in a bowl.

  2. Step 2 of 16

    I add the sugar.

  3. Step 3 of 16

I pour in the milk and mix with a spoon.

  4. Step 4 of 16

I add the salt and mix until well absorbed.

  5. Step 5 of 16

I add the oil and mix.

  6. Step 6 of 16

I transfer to a floured worktop.

  7. Step 7 of 16

I knead by hand. More flour may be needed, as flours absorb differently; the dough should be soft but not sticky. I form a ball, put in a bowl, cover with cling film and leave to rise in the switched-off oven with its light on for 2 hours.

  8. Step 8 of 16

After 2 hours, the dough has doubled.

  9. Step 9 of 16

I turn it onto the worktop and, without kneading, divide into 9 pieces, or 12 for very small rolls. I weighed the dough and divided by 9 so they were all equal.

  10. Step 10 of 16

I shape each piece into a little parcel, pinching towards the centre.

  11. Step 11 of 16

I turn them over and roll into balls with my palm.

  12. Step 12 of 16

I arrange the balls well apart on a tray lined with baking paper.

  13. Step 13 of 16

I cover with a tea towel and rest for 20 minutes, then brush with milk.

  14. Step 14 of 16

I scatter seeds on top if wanted, or leave plain.

  15. Step 15 of 16

I bake at 200°C in a conventional oven for 20 minutes. Leave to cool before cutting and filling as you like.

  16. Step 16 of 16

Keep for a few days in food bags.
