A very simple, quick, fresh and inexpensive recipe, yet full of flavour and very fast to prepare when time is short. I used a lemon freshly picked from my trees: wonderful flavour and fragrance.

Bring salted water to the boil. The sauce is very quick to prepare.

I put the ricotta and grated cheese in a bowl, add salt and a generous amount of pepper.

I grate the zest of a lemon and add some thyme leaves.

I pour in 3 tablespoons of oil.

I mix well. Meanwhile I have brought salted water to the boil and cook the pasta. I add a couple of tablespoons of cooking water to soften the ricotta mixture and make it creamy.

I add the drained pasta, always keeping a few tablespoons of cooking water to add if needed: it should not be too dry.

I serve, add a grind of pepper and more grated lemon zest, and finish with a drizzle of oil.
