Sweet potatoes, also called American potatoes, are available in supermarkets. The original contrasts them with ordinary potatoes as low in fat and rich in vitamins A and C, rich in minerals such as iron, magnesium and potassium, and carotenoids said to reduce the glycaemic index.Their sweet flavour recalls potato, pumpkin, carrot and chestnut. Bake, steam, boil, fry, microwave or cook in parcels.

I wash potatoes well because we use their nutrient-containing skin.
I halve carefully, as firm.
I cut large wedges.
I wash herbs.
I put potatoes in a bowl with salt and pepper.
I add herbs and sweet paprika.
I add extra virgin olive oil.
I massage well to flavour and coat.
I arrange on a parchment-lined tray and bake at 180°C for 30 minutes.
They should be tender and golden.
