Ingredients and method

INGREDIENTS
THIN-SKINNED POTATOES
SAGE, ROSEMARY, THYME
GARLIC POWDER
GRATED CHEESE
SALT
PEPPER
EXTRA VIRGIN OLIVE OIL
TOPPING
STRACCIATELLA CHEESE
SMOKED SALMON
Very simple and a delicious dinner saver. Choose cured meats or cheese, or enjoy with herbs alone. Choose similarly sized, thin-skinned potatoes, scrub well and boil in salted water or microwave.

While hot and tender, I place on oiled baking paper and gently flatten with an oiled meat mallet to about a cm without breaking them apart.

I scatter chopped sage, rosemary and thyme, garlic powder, pepper, salt and extra virgin olive oil.

I add grated Parmesan and bake at 200°C for about 30 minutes.

They should be golden, crisp and slightly charred.

Enjoy plain or, as I did, top with leftover Stracciatella and smoked salmon. Wonderful.
