Ingredients and method
The preparation remains in its original order; guided mode is not available for this structure.
A very simple light lunch or supper, made distinctive with ground flavoured salt.
INGREDIENTS FOR 2 PEOPLE
6 thin chicken breast slices
Garda extra virgin olive oil
1 Garda lemon
Beechwood-smoked salt
2 courgettes
Garda extra virgin olive oil
Grey Brittany sea salt
I flatten chicken under cling film with a meat mallet to avoid breaking it, then lightly oil and sprinkle with lemon on a plate.

I heat a griddle and quickly cook the chicken on one side.
Then turn and cook the other, without overcooking or it becomes dry and tough. Do not pierce with a fork or juices escape; use kitchen tongs.

I thinly slice courgettes with a mandoline and grill on the hot griddle.

Once grilled, I add a little oil and ground grey Brittany sea salt.

I arrange courgettes and chicken on a plate, grind beechwood-smoked salt over chicken and finish with oil.

These salts are now available in many supermarkets and can transform a simple dish, enhancing flavour with a distinctive touch.
Chicken cooking is crucial: it quickly becomes tough as a shoe sole!
