I love octopus and baby octopus in a slightly spicy sauce. Simple but delicious. I used convenient supermarket frozen packs, or buy fresh if possible; they are often sold thawed for tenderness, like octopus.
INGREDIENTS
1 kg BABY OCTOPUS
1 JAR OF CHERRY TOMATOES OR TOMATO SAUCE
2 GARLIC CLOVES
GROUND CHILLI
2 GARLIC CLOVES
2/3 PARSLEY STALKS
CHOPPED PARSLEY
1 GLASS OF WHITE WINE
EXTRA VIRGIN OLIVE OIL
SALT
BREAD FOR BRUSCHETTA
I thaw and thoroughly wash baby octopus.

I fry a teaspoon of chilli in plenty of oil for a few minutes, adjusting heat to taste.

I add octopus and turn for 5 minutes.

I deglaze with white wine and let evaporate.

I prepare crushed cherry tomatoes or tomato sauce.

I add them.

I add parsley stalks and salt.

I cover and cook about 40/45 minutes until fork-tender. I add chopped parsley and, if sauce is thin, cook uncovered another 5 minutes.

I toast bread, drizzle with oil and rub with garlic if wanted.

I serve octopus stew with bruschetta: deliciously spicy, try it 😜👋.
