Ingredients and method
The preparation remains in its original order; guided mode is not available for this structure.
A delicious, light main course. Parcel cooking concentrates flavours and the steam makes the meat very tender. Prepare ahead to let the chicken absorb more flavour.INGREDIENTS FOR 2
2 CHICKEN THIGHS
1 GARLIC CLOVE
1 ORGANIC LEMON
ROSEMARY
SAGE
THYME
GINGER
PARMIGIANO
EXTRA VIRGIN OLIVE OIL
SALT
PEPPER
I remove the skin and bones. It is not difficult, just needs patience and care.
I trim any fat and flatten well into a chicken steak.
I sprinkle with salt and pepper.
I chop sage, thyme, rosemary and garlic.
I add about 2 cm peeled, grated ginger.
I add grated zest of an untreated lemon.
I mix a little extra virgin olive oil into the chopped herbs to make a paste.
I spread it evenly over the chicken.
I finish with grated Parmigiano.
I lay baking parchment over foil, lightly oil it and put each chicken thigh on its own sheet.
I close into parcels, place on a baking tray and rest for about ten minutes.
I bake at 200°C for 30 minutes.
I open the parcels and serve hot with potatoes or fresh vegetables.Original source: https://incucinaconlilly.com/2018/04/15/pollo-al-cartoccio/
