Stock vegetables look tired, but I hate discarding them. With leftover cauliflower, I make delicious patties and serve leftover spicy tomato sauce. Quantities are by eye; pictured vegetables made 7 patties.
INGREDIENTS
STOCK VEGETABLES (celery, carrot, onion)
BOILED CAULIFLOWER
1 EGG
3 SLICES OF SANDWICH BREAD
4/5 TABLESPOONS OF GRATED CHEESE
FONTINA OR CACIOTTA CUBES
GARLIC POWDER
SALT
PEPPER
EXTRA VIRGIN OLIVE OIL
PANKO OR BREADCRUMBS TO COAT

I roughly mash drained vegetables with a fork.

Likewise cauliflower.

I put in a bowl with chopped bread.

I add salt, pepper, garlic powder and egg.

I add Parmesan for firm but not hard dough.

I mix, adding crumbs if too loose.

I form balls around cheese cubes, preferably melting cheese.

I close and coat in panko or breadcrumbs.

I spray with olive oil in the air fryer.

I cook at 200°C about 20 minutes, turning halfway, until golden.

I serve tomato sauce.
