One of the best-known and most requested dishes in Chinese restaurants, easy to make at home. Boiled basmati rice is stir-fried in a wok or pan with scrambled eggs, spring onion, peas, ham and soy sauce. Delicious and light; there are many versions, including chicken or prawns.

  1. Step 1 of 10

I boil the basmati rice according to the packet instructions, drain while still firm and leave to cool for at least half an hour or in the fridge.

  2. Step 2 of 10

I used frozen peas: blanch in water, drain and set aside.

  3. Step 3 of 10

I beat the two eggs with a pinch of salt in a bowl.

  4. Step 4 of 10

I heat a couple of tablespoons of vegetable oil in the wok, add the eggs and scramble, keeping them soft. I remove and set aside. I add another 2 tablespoons of vegetable oil to the wok, add the thinly sliced spring onion and fry for a minute.

  5. Step 5 of 10

I add the peas and cook for a few minutes.

  6. Step 6 of 10

    I add the scrambled eggs.

  7. Step 7 of 10

I add the cold basmati rice, mix and stir-fry over a medium heat.

  8. Step 8 of 10

I add the cooked ham and toss for a few minutes; the ham should not cook further.

  9. Step 9 of 10

I add a couple of tablespoons of soy sauce, or more to taste.

  10. Step 10 of 10

Ready: delicious, colourful and flavourful. The original says leftovers keep for a couple of days in the fridge and can be reheated in a pan.
