Simple but flavourful dinner saver with few ingredients. Suggested rice is 80 grams per person, but I use 100 because someone always wants seconds 👍.

  1. Step 1 of 8

I trim, wash and thinly slice leek.

  2. Step 2 of 8

I gently soften in plenty of oil, adding stock if needed and little salt.

  3. Step 3 of 8

I add rice and toast briefly.

  4. Step 4 of 8

    I deglaze with white wine.

  5. Step 5 of 8

Once evaporated, I gradually add boiling stock, stirring to cook.

  6. Step 6 of 8

After 15 minutes, loose risotto is ready. Off heat, I add butter, Parmesan and pepper and vigorously stir and move the pan to release starch for a velvety cream.

  7. Step 7 of 8

I plate with crumbled bacon, air-fried at 200°C for 15 minutes or until crisp, turning halfway. A griddle, microwave or normal oven works too.

  8. Step 8 of 8

I drain cooked bacon on paper and cool to crisp, adding savoury flavour.
