Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

These spaghetti are always delicious. Many people dislike strong garlic, but this technique uses a few steps and ingredients so everyone can enjoy this flavoursome traditional dish.
INGREDIENTS FOR 2
200 g spaghetti
2 large garlic cloves
40 ml extra virgin olive oil
Half a glass of water
Ground chilli
Parsley
Salt
I peel the garlic and remove the inner germ, described in the original as less digestible.
I put it in a small saucepan with a little water and bring to the boil.
I discard the water and repeat 3 times to remove the strong garlic flavour.
I put the oil, water and drained garlic into the blender jug.
I blend.
I obtain a smooth cream.
I pour it into a frying pan and add a good pinch of chilli, adjusting the heat to the chilli you have and your taste, and chopped parsley.
I put the pasta on to cook.
The cooking time is 11 minutes; after 9 minutes I drain it into the sauce.
I finish cooking, mixing well and adding pasta cooking water.
I stir until the liquid is absorbed and becomes creamy thanks to the starch released by the pasta.
I make a nest of spaghetti and add a pinch of chilli. Enjoy: tasty and nicely spicy, with a flavour that is not overpowering.
