Living on Lake Garda, I am lucky to have very fresh fish. I serve this as a complete meal with plenty of fish balls: delicious, flavoursome and slightly spicy.

The preparation remains in its original order; guided mode is not available for this structure.
I remove skin from the two whitefish fillets.
I cut them into pieces.
I remove the bread crust and cut into pieces.
I put fish and bread in a processor.
I process to a paste.
I put in a bowl and add grated cheese, parsley, salt and pepper.
I lightly beat the egg in a bowl.
I add half to the mixture.
I mix and rest for 10 minutes; it should be fairly firm.
I shape balls the size of a large cherry.
I prepare them all and coat in flour.
I prepare them all.
I heat plenty of oil and a garlic clove in a large pan, add fish balls and brown.
Once golden, I add tomato sauce containing chilli, dilute with a glass of water, adjust salt and cook covered for about ten minutes. I remove garlic.
I cook spaghetti until firm.
I add cooked spaghetti to the hot sauce and mix gently for a few minutes without breaking the balls, adding pasta water if needed.
I plate with a pinch of oregano and a drizzle of extra virgin olive oil.Original source: https://incucinaconlilly.com/2018/11/18/spaghetti-con-polpettine-di-coregone-lavarello/
