I love fruit with meat. Here honey softens tart apricots and matches pork beautifully.
INGREDIENTS FOR 2 PEOPLE
1 small pork fillet
5 apricots
1 garlic clove
1 tablespoon cider vinegar
1 heaped tablespoon honey
Salt and pepper
1 goat’s cheese
Wooden skewers

I trim fat and cut pork into bite-sized pieces.

I peel and slice garlic.

I combine meat, garlic and ground pepper.

I add generous tablespoon honey.

Then tablespoon cider vinegar.

Then a few tablespoons olive oil.

I cover and marinate a couple of hours.

I wash, stone and cut apricots into 4.

I alternate apricot and marinated pork on wooden skewers, two per person.

I grill carefully because honey colours quickly; avoid overcooking and toughening meat.

Once cooked, I salt lightly.

I blend oil, little vinegar, honey, salt and pepper.

A thick dressing forms.

I plate two skewers beside 2 goat’s cheese pieces for freshness and dress everything.
